    Our Thanksgiving was just the two of us with too much turkey I'll be making a pot of turkey chili later this week with the dark meat that I put in the freezer. We went to pick out our Christmas tree on the Sunday after Thanksgiving - we used to go on the Friday after, but with my seasonal job, we had to push that back. I had a busy week following, with tech week before our show opened - A Christmas Carol - and we just wrapped up our second weekend of performances. Now it's just work, instead of work AND shows. Whew!

    Christmas will be quiet - not sure what I'm going to fix for dinner. I might have a piece of brisket still in the freezer; if so, we'll be eating that.

    Christmas is just a few short days away, it has been so warm here and I am having a terrible time getting in the spirit. I didn't send any cards out, I just kept putting it off, and since I only received 2 I am guessing many other people felt the same. Giving money to my niece and nephews they are in college and could really use the cash, I am afraid the money I give them won't even fill a gas tank. We will be going to my sister's house for dinner. We did drag ourselves out to a drive-through Christmas Light display and an old-time candlelight walk (that is the good thing about having warm weather) it will be almost 60 degrees on Christmas day. I miss Mom and my FIL, I thought it might get easier as the time when on but I am wrong, for a brief second I still think I can call her when something happens even though she has been gone since 2018. Sorry to whine but I have to tell someone and I don't want to bring anyone else down with me. Thanks for listening. I hope everyone has a great holiday and please be safe out there.

    I will be happy to take some time after Christmas to do some baking. But I need to share it with other people so we don't eat all of it at home, LOL. When we did our Christmas show at the big theater downtown, I made two big platters of baked goods for the professional crew - one of oatmeal cookies (with raisins and cranberries), and one with banana bread. They were very appreciative for the recognition and goodies.

    I did make little holiday bags for all the cast and crew - each had a peppermint Tootsie-Pop, a few Frooties (fruit-flavored mini Tootsie rolls), and a red foil chocolate heart. There was a printed thank you note, personally signed by me - some with special comments. Each bag was labeled with the name so I didn't forget anyone. And I made a few extra with blank labels, just in case I did forget someone. Some of the crew also received a little fluorite octahedron crystal, too (some had received that from me when they worked on an earlier show with me this summer). It put me in the Christmas mood.

    We have large get togethers since most of the family is local. I hosted Thanksgiving with 22, Christmas will be at my sisters with about 30. We have Christmas weather in Florida this week, it is in the 70s and 80 by next week...Christmas food theme will be Italian. We usually do family gifts, then eat , then play white elephant. Then sit back and relax.
    This Christmas will be the first with out my son ...He will be busy working and couldnt get leave as he is a Navy Dr in San Diego.

    I had picked up a spiral slices ham, but broke down and bought a turkey breast (bone-in) for Christmas dinner. We're eating the ham now in sandwiches, LOL. It's easy enough to pop a breast in a roasting bag. Mashed potatoes for sure, probably a green salad, not sure what else.

    So - the ovens in the gas stove were being finicky on Christmas, and didn't seem to want to ignite. The bone-in turkey breast would be too tall in the roasting bag for he countertop electric oven - probably would have puffed up enough to touch the heating element. Argh. So I decided I would have to figure out how to debone the breast in order to reduce the height. Never tried to do that, but grabbed a couple of knives and went to work...

    It took a little time, but I managed to do a decent job of it I seasoned it, tucked a little celery and sliced onion in the middle, tied the whole thing together with cotton twine in sort of a roll, and popped it into the roasting bag. With the reduced height, it worked well in the electric oven. It came out juicy, sliced well after resting, and was deemed a success! Whew....

    Of course I boiled the bones for broth, and will use it for soup or beans. We ate plenty of turkey, and I've diced up the leftovers to use for a pot pie later. If I see another bone-in breast on sale, I might have to give this another try.

    Have you tried lighting the oven burners with a long lighter? Mom's clicker thing didn't work for quite a while a long time ago and was able to light the oven from the broiler below.
