Mmm I made porcupine meatballs last week and they were awesome!

I was going to make a roast, but it seems to be pretty nice outside so I don't know if I'm still in the mood for it now. We'll see

    meatballs made with porcupine meat.

    J/K

I'll have to pull my recipe.....
but, it's ground beef, rice, onion, tomato soup and some other things I can't remember off the top of my head.

since DH is gone for 3 weeks (and he doesn't like them) I get to make them.

LOL that is exactly what I told my kids they were. I hadn't made them for a long time so the younger two didn't really remember them.

    Vee030473:
    that sounds so gooood!

    Porcupine meatballs

1# ground beef (porcupine meat )
    1 can tomato soup (divided
1 cup minute rice (I use brown minute)
    1 egg
    1/4 cup chopped onion
1 tsp salt (I omit as the soup has enough salt)
I add some freshly ground pepper and a bit of garlic.

Mix 1/4 can of the soup with the above ingredients.
    Shape into 12 meatballs.
    Brown all sides.

    Sauce:
    remaining tomato soup
    1 cup water
    1/4 tsp garlic powder
    1 tsp dry mustard

Mix together and pour over meatballs.
Bake covered at 350* for 1 hour
