    Nixed the meatloaf since the 16 yr old is out w/his dad so a meatloaf for 2 was nuts.. making spaghetti and meatballs since I defrosted the burger

    Jicama Cole Slaw

    Jicama Cole Slaw


    2 cups shredded savoy or green cabbage
    1 cup shredded radicchio or red cabbage
    1 cup shredded jicama
    1/2 yellow sweet bell pepper cut into match-stick size pieces
    1/2 sweet onion, peeled and cut into match-stick size pieces(either empire,spanish or Vidalia)
    1 large carrot, coarsely grated
    Coarse salt and freshly ground black pepper to taste
    3 tablespoons light or fat free mayonnaise
    1 tablespoon apple cider vinegar
    2 teaspoons olive oil


    In a large bowl, combine cabbage, radicchio, jicama, bell pepper onion and carrot. Sprinkle with coarse salt and pepper.

    In a small bowl, combine mayonnaise, apple cider vinegar, and olive oil; pour over the salad mixture and toss to coat. Cover and refrigerate at least 1 hour before serving.( the longer you leave it in the fridge the better) I leave it in usually for 3 hours. Stir again just before serving!

    A dog is not almost human , I know of no greater insult to a canine than to describe it as such.
