It comes out great. Really tender. Unfortunately, I'm the only one at home who will eat it. And I can't eat an entire corned beef. lol

That's how I've always cooked corned beef is in the crock pot. I just put it in the pot before I leave for work. I work ten-hour days and it isn't too long for the corned beef. It always comes out tender. But I usually do buy the biggest one I can find. I never used to like it. But now I love it. I guess you can develop a taste for it. And then the leftovers make great sandwiches.

I always cook mine in a crockpot, too. I put in a can of beer, the spice packet, garlic and a bay leaf. I love to serve the beef on a good roll with spicy mustard and top with coleslaw...Mmmmm good.

Why not learn to enjoy the little things - there are so many of them.

Yup, low for at least 8 hours. You didn't trim away the fat, did you? I find that my roasts aren't so tender if I trim them. Now I just pick it off the roast before I serve it.
You're adding liquid to it, right?

Ohhhh hubby would spank me silly if I cut the fat off! LOL..he's a meatcutter and he knows how to cook meat. He can't cook anything else, but he can do meat!! I usually cook meats around 8-10 hours in the crockpot. And yes, I keep LOTS of liquid on it. I honestly can't remember how long I cooked it. Its been a while since I tried the crockpot and it wasn't good, so I went back to cooking it on the stove. (the joy of working from home..I can cook that way when I want to!)

Guess I'll try again soon. My wee irish grandmother would roll in her grave if we didn't have Corned beef, cabbage, and spuds on St. Patty's day!!

Tljohn - We have the same birthday! My birthday is St Patricks day too!

Corned beef is my favorite!! YUM!! I usually cook mine in the crock pot too and it always turns out perfect. I have also used my pressure cooker to cook corned beef. Now I'm going to have to go to the grocery store today and get a corned beef!
