If you thought that one was good you have to try my version, no cans to open.

    Cowboy Potatoes

    1 quart milk
10 brown potatoes unpeeled & well washed, sliced 1/8 thick
    2 large brown onions, chopped
    8 cloves garlic, chopped
2 lbs (or more) of ham diced
    1/2 cup flour
3 cups grated cheddar cheese (or more)
    Salt & pepper

In a large casserole dish layer: potatoes, onion, ham, garlic, & lightly sprinkle with flour barely covering these ingredients, add a layer of cheese. Repeat until you are out of everything & top off with layer of cheese. Cover & bake at 350° on lower rack for about 1 hour, or until potatoes are tender. Remove top & bake for 10 minutes until cheese on top is browned. Remove from oven & cool for 10 minutes (while you prepare the salad) and serve.
    Serves 4 to 6.

(Mushrooms, celery and green onions have been known to appear in this casserole, too!)
