Question What to do w/ leftover milk?

Hi all! I am doing some research for my missionary friends in Brazil. They have recently gotten some milk cows at the orphanage that they run, but always have a excess of milk every day. There are not enough refrigerators (or enough power) to store all of the excess) so they arer looking for SIMPLE recipes for things they could make with the extra milk, like butter, cheese, yogurt, etc. so it won't go to waste. If you know of any recipes (they need to be pretty basic, as they dont have acess to alot of the convieninces we do in the USA), please email me or post them here! They are coming to the states August 10 and I am trying to compile a sma;l recipe book to take back w/ them.
    Thanks for all the help!

Do they have flour and grease? They could make biscuts. Other than that, I don't know.

They could make potato soup. We just use milk, potatoes, butter and salt and pepper. I am not sure how long it would keep, but it uses alot of milk.

Here is a site that has a simple recipe for making butter with no refrigeration. I don't know if this would be the same in Brazil though because of the climate
