I like fried spam on bread, with mayo and onion. Haven't had that in a bijillion years though. So maybe I should say I USED to like it?

SPAM OVEN ROASTED TURKEY MEGA- MUFFINS
Winner of the 2001 Spam Cook Off at the Indiana State Fair
{{for contest, product or recipe questions, please call 1-800-523-4635}}
4 eggs
2 cups heavy cream
1 (6 oz) package cornbread stuffing mix
1 (12 oz) can SPAM OVEN ROASTED TURKEY, cut into 1/2 inch cubes
1/2 cup sweetened dried cranberries
Heat oven to 350*. In large bowl, combine eggs & cream. Add stuffing mix, SPAM cubes, and cranberries. Stir until evenly mixed. Allow to set for 5 minutes. Lightly grease extra large muffin or pop-over pan, fill 2/3 full. Bake for 25-30 minutes or until set in the center. Let stand for 5 minutes before removing from pan.
Serve with Spiced Cranberry Sauce.
Spiced Cranberry Sauce
1 cup jellied cranberry sauce
3 tablespoons frozen orange juice concentrate, thawed
1 tablespoon honey
1/4 teaspoon Allspice
Mix together in large bowl
refridgerate 2 hours
Serve.

Yea well, I spent more than a fair amount of time in Indiana while Sarah was in college there for 4 years. All I gotta say is...Muncie has a Mardi Gras celebration and an Elvis Festival.

It depends upon some schooling that I have NO control over my Boss's Boss is setting it up possibly in June and it is mandatory to attend. If it is not schedualed in the time frame mentioned yeah sure but it is unknown at this time the exact date Ugh

My DRY scrambled eggs Saturday morning at Bubba's Diner were sunny side up!
Fugi, Fugi, Fugi. I thought you knew me better. TELL your boss and your boss's boss that I said Fugi can't play the week of June 9th. Yeesh, how hard is that? If you want, have them call me or I can send a note in with you.

Here are a few recipes my family really likes.
The Christmas Salad is good all year round and is a favorite for family gatherings.
Christmas Salad
1 can cherry pie filling
1 small can crushed pineapple,well-drained
1 can condensed milk
2 cups mini marshmallows
1 container Cool Whip
1 small pkg chopped pecan pieces
Mix in order given. Chill well. Overnight works best.
This can be frozen in an airtight container for up to two weeks.
Cranberry Fruit Salad
1 quart chopped fresh cranberries
2 large red apples chopped
1 and a half cups sugar
1 pkg. raspberry gelatin
1 pint boiling water
1/2 cup chopped celery
1/2 cup chopped nuts (walnuts or pecans)
Combine cranberries, apples and sugar, allow to set overnight. In the morning dissolve gelatin in boiling water and add to mixture. When chill,but not set, add celery and nuts,mix well. Refridgerate to set.
I have made both of these sausage recipes and they are very good.
Homemade Italian Sausage
2 lbs. coarse ground lean pork
1 Tbsp coarse ground fennel (I used 2/3 tbsp anise instead)
2 bay leaves, crushed
1 Tbsp. dried poarsley
3 cloves garlic, crushed
1/8 tsp. hot dried red pepper flakes (optional)
1 tsp. salt
1/4 tsp. blaack pepper
4 Tbsp water
Mix all ingredients carefully, let stand for 1 hour, and mix again.
Stuff into sausage casings or can be used as is. Makes 2 lbs.
This is really good in recipes calling for mild italian sausage.
Homemade Chorizo (Mexican Sausage)
1 lb. coarse ground lean pork
1 tsp. salt
2 Tbsp. chili powder (can adjust for taste preference)
1/4 tsp. cloves
1/2 tsp. cinnamon
1 Tbsp. paprika
1 clove garlic, crushed
1 tsp. oregano (I leave the oregano out and it is still very good)
2 Tbsop. cider vinegar
2 Tbsp.water
Combine all ingredients, mix well.
Stuff into casings or use as is. Makes 1 lb.
This is good in breakfast burritos or mixed with hamburger and used in regular burritos or tacos.
