Pad Thai Pad Thai
Sauce:
3 Tbs. white vinegar
2 Tbs. water
2 ½ Tbs. fish sauce (Nam Pla)
1 Tbs. tomato paste
3 Tbs. dark brown sugar
½ Tbs. dried shrimp, pounded to a powder
1 tsp. Tamarind concentrate
¼ cup coconut milk
Dish:
1 Tbs. toasted sesame oil
¼ cup Tofu, cut into ¼” thick, 1” squares
1 Tbs. ****ake mushrooms
1 Tbs. cilantro, chopped
1 tsp. basil, chopped
1 tsp. garlic
1 tsp. hot chili garlic sauce
½ lb. Medium rick stick noodles, Bun Tap Chua
½ cup sauce
Garnish:
2 Tbs. crushed, roasted peanuts
1 cup Mung Bean Sprouts
¼ cup carrot sticks
green onion
cilantro leaves
fresh lime

Double Cheeseburger Pasta
(one serving)
8 oz. hamburger
2 oz. BBQ Marinara (1/2 BBQ sauce, ½ marinara sauce)
2 oz. red onions (1/2 slices)
4 oz. cheese sauce
1 cup shredded cheddar cheese
10 oz. cooked rigatoni
½ cup Durkee Potato Sticks
½ cup lettuce (shredded)
4 slices Roma tomatoes
1 oz. sesame seeds
3 pickle slices
Sauté hamburger and red onion till desired doneness (rare, medium, etc.). Break into 8 pieces. Add 10 oz. heated rigatoni. Toss and heat for one minute. Place 2 oz. BBQ Marinara on bottom of bowl and place pasta and meat on top. Add cheese sauce. Garnish with sesame seeds, lettuce, tomato slices, potato sticks, and pickles.
Santa Fe Pasta
1 tsp. corn oil
½ chicken breast, seasoned and cut into cubes
¼ red onion, cut into strips
¼ bell pepper, cut into strips
1 Tbs. diced green chili
2 Tbs. black beans
2 tsp. diced pimento
2 cups cooked linguini
½ cup mesa lime sauce (recipe below)
¼ cup grated cheese
1Tbs. sour cream
¼ cup toasted tortilla chips

Sauté chicken, onion, bell pepper, chilies, black beans, and pimento in corn oil. Cook until chicken is done and onion caramelized. Heat pasta and place in large bowl. Ladle in the mesa sauce over pasta and top with ingredients. Garnish with remaining ingredients.
Mesa Sauce:
1 Tbs. butter
2 Tbs. mesa flour
1cup chicken stock
¼ cup cream
1 tsp. salt
¼ tsp. cumin
1 Tbs. lime juice
Make a blonde roux with butter and flour and slowly add in chicken stock, while stirring. Add cream, salt, cumin, then cook until mixture coats the back of a spoon. Add lime juice and use as needed.

I have been a major biatch today. Just woke up on the wrong side of the bed. Or as mom said...I invented a new side. :eek: Anyway, I'm feeling better, waitin on mike to get home....andn wondering where he went LOL

Palachinke
Cakes:
1-1/4 cup of cake flour
1-1/4 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon sugar
1 cup milk
2 egg yolks, beaten
2 Tablespoons melted butter
2 egg whites, stiffly beaten
Filling:
1 pound creamed cottage cheese
2 eggs
1/4 cup sugar (can be less)
Cake: Sift flour, measure, add baking powder, salt and sugar; sift once more. Add milk to egg yolks. Add flour mixture gradually; mix to smooth batter. Add butter. Fold in egg whites. Bake on hot greased griddle.
Filling: Mix well. Spread on each pancake, roll up and place side by side in greased cake pan.
Bake 30 minutes at 350 degrees.

French Mint
Four 1-ounce squares unsweetened chocolate
1 cup soft butter
2 cups confectionery sugar
4 eggs
1 teaspoon vanilla
1 teaspoon peppermint extract
Chopped nuts
Melt chocolate, cool, and set aside. Using an electric beater, beat butter while gradually adding sugar (about 15 minutes); add cooled, melted chocolate. Beat 5 minutes more. Beat in eggs, one at a time. Mix in vanilla and peppermint extract.
Sprinkle chopped nuts on bottom of 24 paper cupcake holders in cupcake pan. Fill each cupcake holder half full. Sprinkle more nuts on top,
Freeze for at least 3 hours.

Buttermilk Coffee Cake
2-1/4 cups regular all-purpose flour (sift before measuring)
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup brown sugar, firmly packed
1/4 cup granulated sugar
1/4 cup salad oil
1/2 cup chopped walnuts, coarsely chopped
1 teaspoon cinnamon
1 teaspoon soda
1 teaspoon baking powder
1 egg, slightly beaten
1 cup buttermilk
Sift flour again with salt and the 1/2 teaspoon cinnamon into large bowl of electric mixer. Add brown sugar, granulated sugar, and salad oil. Mix on medium speed until well-blended and feathery. Take out 3/4 cup of this mixture for the topping: add nuts and the 1 teaspoon cinnamon and mix, set aside.
To the remaining mixture, add soda, baking powder, egg and buttermilk. Mix until smooth. Spoon mixture into a buttered pan (9 x 13 x 2 inches) and level off the top. Sprinkle the reversed topping evenly over the top and lightly press in with the back of a spoon. Bake in a moderate oven (350 or 325 degrees for glass pan) for 25 to 30 minutes or until it tests done. Cut in squares; serve warm.

Cinnamon Crumb Coffee Cake
Batter Ingredients
1-1/2 cups flour
2-1/2 teaspoons baking powder
3/4 cup sugar
1/2 cup melted butter
1/2 cup sour cream
1/2 teaspoon salt
1 egg
1/2 cup milk
1 teaspoon vanilla
Streusel Ingredients
1/2 cup brown sugar
2 Tablespoons melted butter
2 Tablespoons flour
1 teaspoon cinnamon
1/2 cup chopped nuts
Batter: Sift flour, baking powder, and salt together and set aside. In separate bowl, beat egg until frothy. Beat in sugar and butter until combined. Add milk, sour cream, and vanilla. Add a little more if too stiff.
Streusel: Combine streusel ingredients in a small bowl and mix together. Set aside.
Put 1/2 batter in greased pan and spread evenly. Sprinkle 1/2 streusel over batter. Repeat. Bake at 350 degrees in greased 8 x 8-inch pan for 25 to 30 minutes.

I have groceries and food. Dahubby has worked a double the last 2 nights, and da dot has been gone, so I don't cook. Although I did cook fresh green beans, fresh tomatoes and new potatoes together for my lunch today. Was nummy too.

we have some food........ground beef, bratwurst, sausage, taters, leftovers...but i want camping food! aka: JUNK food, and bananas, chips u know?
Going to hit Aldi's tomorrow for the big big camping junk food buying thing. lmao yea that! :) Not much room in the car...but hey i'm buying SOMETHING ohhh and kroger has a purdy good sale on candy now :)
